Facing the Aa River, just a stone’s throw from Gravelines, an unusual storefront greets us. This building, over a century old, was once a bistro, one of the many that once graced our villages. It was the local haunt of the workers from the old sawmill next door. Transformed into a restaurant in the 1980s, the building has retained all its charm. Whether you choose the set menu or à la carte, every palate will find something to delight in Olivier’s cuisine, which showcases both land and sea produce with equal skill.
« I enjoy using chicory in my dishes. Some people are wary of its bitterness, but chicory adds a certain finesse to many dishes, » says Olivier.
