le Ch'ti Ramisu

Ingredients (for 10 people) :
1 package of speculoos
250 grams of mascarpone
1 bowl of chicory infusion
3 eggs + 1 pinch of salt
80g of brown sugar
6 tablespoons liquid chicory
15g bitter chocolate powder

Recipe :
1.Prepare your chicory infusion: a bowl of hot water + 3 tablespoons of liquid chicory. Pour the brew into a deep plate.
2.Dip the speculoos one by one (and quickly) in this brew. Arrange them in the bottom of your dish (thickness one to two speculoos max).
3. Beat egg yolks with brown sugar and 3 tablespoons liquid chicory. Add the mascarpone to this mixture.
4.Put the white firmly in snow + salt. Stir gently in the preparation yellow + brown sugar + chicory + mascarpone.
5.Recover the speculoos of this preparation. Refrigerate for 24 hours before serving. When serving, sprinkle with powdered chocolate.
